We'll meet at a place city centre and head to a market to shop together.
Then we'll head to our village, which is 20 minutes from city centre.
We'll start with chocolate and bread. We'll then prepare our breakfast: tortillas, memelitas, tetelas, empanadas, and three traditional molcajete sauces. During the process, we'll explain the flavours, techniques, and traditions related to the ingredients and dishes.
Now it's time to enjoy breakfast! We'll talk about Oaxacan culture and the history of its cuisine.
Now, we'll prepare our lunch: yellow mole, green mole, black mole, or coloradito.
The goal is to understand the flavours, names, differences, and how to substitute ingredients when we don't have them on hand.
