For over 260 years, Maison Fossier has been carrying on a unique savoir-faire that has even been recognised by royal courts. In 1775, its biscuits were served at the Coronation of Louis XVI in Reims, and the biscuit factory became a supplier to the king.

Today, Fossier is the only biscuit factory in Reims still producing these iconic pink delicacies, with over 100 employees.

    What awaits you:

The Biscuit Rose: a legend born of a happy coincidence
Around 1690, bakers in Champagne created a recipe to take advantage of the heat of the bread oven after baking: the “bis-cuit” (baked twice) of Reims was born!

The characteristic pink colour came about by accident: to hide the brown marks left by the vanilla, the baker added a natural colouring made from cochineal.

Since then, the recipe has remained unchanged, as has the double-baking method.

Label of excellence: Maison Fossier was awarded the “Living Heritage Company” label in 2006, in recognition of its exceptional expertise.

Champagne tradition: It's customary to dip Pink Biscuits in champagne or red wine.

Photography permitted: Capture your gourmet tour!

Gift idea: The factory shop offers numerous gift boxes and gourmet assortments that are perfect for giving.
