Begin your tour with a visit to a local palm sugar farm. Learn about the process of making palm sugar, from collecting sweet nectar (sap) from palm tree flower buds to boiling it down in large woks to evaporate water until it thickens into a caramel syrup. Watch as the syrup is cooled and moulded or whipped into its familiar solid pucks or soft paste form, a process similar to making maple syrup but with specific traditional techniques for aeration and shaping.
