Finca Don Manolo, in Dosquebradas – minutes from Pereira in Colombia's Coffee Region – has been perfecting a rare art for more than 40 years: cup profiling, treating coffee with the same depth and precision as wine. This is not a basic coffee tour.
It all started when Don Manolo decided to do something unusual in Colombia: taste his own harvest. That curiosity became a deep understanding recognised by the National Federation of Coffee Growers, which invited the family to teach everything they had learned.
On this 4-hour private experience, you'll walk through the growing areas and learn how the soil, altitude, and tree varieties shape each bean. You'll see the roasting process, explore traditional and modern preparation methods, and finish with a guided premium tasting designed to open your senses to the aromas and flavours hidden in each cup.
The family personally leads the entire experience, sharing four decades of practical knowledge on their own land. Available in English and Spanish for private groups of 1 to 10 people.
Stop 1 — Welcome and History of the Farm
Arrive at Finca Don Manolo and meet the producers. Discover how Don Manolo's curiosity to taste his own coffee more than 40 years ago started a tradition that ended up attracting the attention of the National Federation of Coffee Growers.
Stop 2 — Tour of the Crops
Walk through the growing areas and see how the soil composition, altitude, climate, and tree variety determine the final flavour of the bean. The family explains the decisions behind their production — things most visitors never get a chance to ask about.
Stop 3 — Roasting and Processing
Observe and learn how the raw bean is transformed through roasting. Understand how time, temperature and technique create completely different flavour profiles from the same harvest.
Stop 4 — Traditional and Modern Preparation Methods
Experience multiple preparation methods, from the traditional Colombian approach passed down from generation to generation to more modern techniques used in speciality coffee.
Stop 5 — Premium Cup Profiling Tasting
The highlight: a guided sensory session where you taste different coffee profiles and learn to identify aromas, acidity, body, and flavour notes — just as the family designs its own cups. This is where coffee becomes comparable to wine.
