We'll discuss how the oysters are grown, the influences on their flavour, Maine's ecology and lifestyle practices, and stories from the coast. Our experience is backed by training and education from the Oyster Master Guild, a certification programme and global network of skilled oyster shuckers, sommeliers, educators, and experts.
