Hotel Cueva del Fraile
They had an event during our stay, which led to waiting in the parking lot for an hour to find parking. Pool was closed. Shower head broken. Place is very peaceful and serene. Very clean and staff helpful. Close to being an excellent hotel, just need to tie up some loose ends.

Parador de Cuenca
This is a beautiful 16th century convent that was converted into a hotel. The views of Cuenca hunging houses are stunning.
