I also recommend more than a night's stay, so you can try the different breakfast styles, restaurants, or take the shuttle into xinbeitou to experience local Taiwanese markets. The staff is amazing and very attentive, the facilities are great and clean and the rooms are very nice. We loved that the hot spring water was piped into a tub in our bathroom for our own private soak.
